Ingredients:
1 cup grated cheese, preferable a softer cheese that melts easily
1/2 c. butter
2 c. uncooked rice
2 cups heavy cream (or you can make a cream sauce if you want a lower calorie version)
1 can water
1/2 c. chopped onion
2 c. frozen broccoli (or chopped fresh broccoli)
Grease long casserole dish or cake pan. Put uncooked rice on bottom of dish. Distribute onions over rice. In medium saucepan, melt butter, then add cream and water. Add cheese and cook until all ingredients blended and cheese melted. Spread broccoli over onions and rice. Pour warm mixture over rice and bake at 350 degrees for 30 to 40 minutes. Serves 6.

This is the side casserole that all our moms made to take to church socials, etc. back in the day. I've updated it to give it a little more class and eliminate those awful canned soups that were in virtually every casserole invented.
