Best Pancakes & Pancake Pizza

From Georgia Gray Turnbow with my variations. I think it is originally a Betty Crocker recipe from the 1960's.

4 c. milk
4 eggs
4 T oil
2 tsp baking soda
2 tsp vanilla extract
4 tsp baking powder
2 tsp salt
4 c. flour
4 T sugar (optional)
1 tsp cinnamon (optional)

Heat iron skillet or griddle on med to low hear while preparing batter. Mix all ingredients together in bowl until batter is smooth. I use a wire whisk. Pour 1/4 to 1/2 cup ladles full of batter onto hot greased (or buttered) skillet and fry until many bubbles appear. When you can push a metal spatula beneath the pancake without it sticking, turn the pancake and cook until center is fully done.

For pancake pizza: Pour pancake batter onto greased pizza pan – A LARGE pizza pan – and bake at 400º until browned and toothpick comes out clean. Slice into wedges and serve with hot syrup & butter.
