A unique but delicious sausage.

Makes 12 patties

1/3 cup finely chopped onion
1 pound ground pork
1 medium apple, peeled, cored, and grated
1 teaspoon rubbed sage
1 teaspoon onion powder
Dash cayenne or chipotle powder (optional)

Instructions:

Stir together all ingredients in large bowl. Shape into 12 patties. Cover; refrigerate a half an hour.

Heat an iron skillet over medium-high heat. Add sausage patties; reduce heat to medium. Cook 5 minutes; turn. Continue cooking until patties are no longer pink (3 to 5 minutes).

Serve immediately as you would serve any breakfast sausage.
