No Sugar Date Nut Chocolate Fudge

After performing many searches for a no-sugar fudge recipe that was not laden with artificial sweeteners, I decided to invent my own. This is a lightly sweet, dark chocolate fudge.

16 oz. pitted dates
5 squares unsweetened baking chocolate - melted
2 Tbls. evaporated milk
1/4 cup pecans (chopped or whole)

Chop dates in *food processor until paste-like consistency. Place date paste in bowl, add remaining three ingredients, and stir well. Press into greased or waxed paper lined 8"x8" pan. Chill. Cut. Enjoy.

As a variation, add 2 Tbls. unsweetened flaked coconut.

*If food processor is not available, dates can be smashed into a paste with a meat mallet or mortar/pestle.
