  • 1 cup all-purpose flour
  • 1/8 teaspoon salt
  • 1/3 cup butter, cut up
  • 1/4 cup light cream
  • 1/3 cup granulated sugar, to dust

***Pink Filling***

  • 1 cup confectioners' sugar
  • 1 tablespoon butter, softened
  • 1 tablespoon light cream
  • 1/2 teaspoon vanilla extract
  • 3 drops red food coloring

***Chocolate Filling***

  • 2 ounces semisweet chocolate, coarsely chopped
  • 1 cup confectioners' sugar
  • 1 tablespoon light cream

Sift the flour and salt into a large bowl. Use a pastry blender to cut in the butter until the mixture resembles coarse crumbs. Mix in the cream. Press the dough into a disk, wrap in plastic wrap, and refrigerate for 30 minutes.

Preheat the oven to 375 degrees F. Line two cookie sheets with parchment paper. Roll out the dough on a lightly floured surface to a thickness of 1/8 inch. Use a 1 1/2 - inch cookie cutter to cut out the cookies. Gather the dough scraps, reroll and continue cutting out cookies until all the dough is used.

Use a spatula to transfer the cookies to the cookie sheet, spacing them 1 1/2 inches apart. Sprinkle with the sugar. Bake for 8-10 minutes, or until just golden at the edges, rotating the sheets halfway through for even baking. Transfer to racks to cool.

Stick the cookies together in pairs with the filling of your choice. Let the cookies stand for 30 minutes to set.

Pink fillinq: Mix the confectioners' sugar, butter, cream, vanilla, and red food coloring in a small bowl.

Chocolate filling: Melt the chocolate in a double boiler over barely simmering water. Remove from the heat and mix in the confectioners' sugar and cream.
