Ready in: < 30 minutes
- 1 1/4 cup all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/3 cup butter, softened
- 1/4 cup light brown sugar
- 1 ripe banana, mashed
- 1 egg
- 1 teaspoon vanilla extract
- 3/4 cup milk chocolate chips
Preheat the oven to 350 degrees F. Grease baking sheets. In a bowl, sift together the flour, baking powder, and salt. In another bowl, combine the butter and brown sugar. Mix on medium speed with an electric mixer. Add the banana, egg, and vanilla and beat on medium speed until smooth. With the mixer running, slowly add the flour mixture to the banana mixture. Mix until blended. Stir in the chocolate chips by hand. Drop the cookie dough by rounded spoonfuls onto the greased baking sheets. Place the baking sheets in the oven and bake at 350 degrees F for 8-10 minutes or until set. Remove the baking sheets from the oven and let the cookies cool for 5 minutes then transfer them to a wire rack to cool completely. Store the soft banana chocolate chip cookies in an airtight container.
