2/3 c. Pace Picante sauce
1/3 c. water
1 Tbsp cornstarch
1 tsp cumin
1/4 tsp salt
2 Tbsp oil
1 lb pork, cut into 1 1/2x 1/4x1/4" strips.
1 small onion, chopped
2 cloves garlic, minced
1 small red pepper, cut in 1x1 1/4" strips
1 small green pepper, cut in 1x 1 1/4" strips
1 8.75oz can whole kernal corn, drained
Combine sauce, water, cornstarch, cumin & salt; set aside. In wok over high heat, heat oil until hot. Add meat, onion, & garlic. Stir fry 4-5 minutes or until meat is done. Add peppers. Stir fry 2 minutes or until crisp tender. Add corn. Stir sauce mixture to blend ingredients. Add all at once to other ingredients. Cook and stir until thickens. Serve with rice or warmed tortillas.
