- 9 slices bacon, chopped
- 1 medium onion, diced
- 3 quarts sauerkraut, rinsed and drained well
- 1 1/2 teaspoon caraway seeds
- 1 1/2 bay leaves
In a heavy 8 quart stock pot, saute the bacon and onion together until the bacon is crisp and onion is limp. Add rinsed kraut and spices. Simmer over low for about 2 hours.
