  • 2 envelopes unflavored gelatin
  • 3 tablespoons cold water
  • 1/2 cup boiling water
  • 3 small cucumbers, peeled, seeded and chopped
  • 2 scallions, green and white parts, diced
  • 2 tablespoons chopped parsley
  • 2 tablespoons fresh dill, chopped
  • 1 cup mayonnaise (fat-free is fine)
  • 2 teaspoons lemon juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/8 teaspoon cayenne pepper

Soften the gelatin in a small bowl in the cold water for five minutes, and add the boiling water, stirring until gelatin is dissolved.

In a large bowl combine the cucumbers, scallions, parsley, dill, mayonnaise and lemon juice and beat well. Add salt, black and cayenne pepper, and taste for seasoning. Transfer to a mold and chill for at least four hours.
