Shepherd's Pie
1 lb ground beef
1/4 large onion
1 can of corn
1 cup shredded cheese of your choice (we use med cheddar)
2-3 potatoes, depending on size (I like the yukon gold ones)
1/4 cup butter
1 can chicken stock
1/4 cup milk
Preheat oven to 350
Chop the potatoes. Put them in a pot to boil with the chicken stock and butter. Add water to completely cover the potatoes. When soft drain them, add the milk and mash them.
Dice onions. Add them to the meat in a pan and brown the meat.
Layer 1/2 the potatoes in the bottom of a casserole dish. Layer the corn. Layer the meat and onions. Layer the remaining potatoes. Spread the cheese evenly over the top.
Put in the oven until cheese is completely melted.
Makes 4 good size servings.
The mashed potatoes are also really good on their own when made like this.
