- 3 eggs
- 1/3 cup flour
- 3/4 cup milk
- 1/4 tablespoon salt
- 2 tablespoons sugar
- 1 teaspoon melted butter
- 2 tablespoons butter, to grease pan
- thick cooked fruit preserves for filling
Beat eggs and add flour sifted with salt. Add a little milk and mix until all lumps are gone. Add remainder of milk and sugar. Beat thoroughly. Heat a frying pan and melt butter. Pour batter thinly into hot pan and fry quickly on both sides. Remove from pan and spread with preserves. Roll the cakes and sprinkle with powdered sugar. Bake in a 350 degrees F oven for 10 minutes.
