Vegetable Couscous
vegetable cooking spray
1/2 cup diced carrot
1/2 cup chopped onion
1 9 ounce package frozen cut green beans, thawed
1 cup canned vegetable broth, undiluted
1/2 cup water
1/4 teaspoon salt
1 cup couscous, uncooked
2 tablespoons Italian dressing
Coat a nonstick skillet with cooking spray, place over medium-high heat until hot. Add carrot, onion, and beans and saute until tender.
Combine broth, water, and salt in a small saucepan, bring to a boil. Remove from heat. Add couscous and cover and let stand 5 minutes or until couscous is tender and liquid is absorbed.
Fluff couscous with a fork. Add vegetable mixture and Italian dressing and toss lightly.
Serves 6.
