Poppy Seed Dressing

1/3 cup honey
1 tsp. salt
2 tbsps. wine vinegar
1 tbsp. prepared mustard
3/4 cup oil
1 tbsp. chopped onion
1 tbsp. poppy seed

Combine first 4 ingred. Add oil, beating with spoon till mixed well. Add onion and poppy seeds, chill several hours.

Serve this over baby spinach, with sliced
purple onion, and sliced mushrooms.
Yields 1 1/2 cups.
