1 green pepper, diced
16 hot peppers, sliced
1 celery stalk, sliced
1 carrot, diced
1 small onion, diced
6 oz green olives
1/2 cup salt
4 cloves garlic, pressed or minced
1 Tbsp dried oregano
1 tsp crushed red pepper
1/2 tsp ground black pepper
1 cup white vinegar
1 cup olive oil
Place veggies and olives in a bowl, mix in salt and enough water to cover mixture. Cover and refrigerate over night. Drain salt water and rinse veggie mixture. Combine remaining ingredients in a separate bowl and pour over veggie mixture. Cover or put in jar and refrigerate for 2 days before using.
