Saltfish Fritters

Ingredients:
- 1/2lb of salt fish
- 1 onion
- 1 scotch bonnet pepper
- 1 clove of garlic
- 3 cups of flour
- A pinch of salt
- 1/2 teaspoon of black pepper
- 2 cups of water
- Oil for frying


Directions: 1- you need to soak the salt fish in water for half an hour.
2- Chop the garlic, pepper and onion in to small pieces, into separate piles.
3-Flake the fish in to small pieces after it has finished soaking for half an hour.
4- Seive the flour into a mixing bowl. Then stir in the onion, garlic, pepper, salt and pepper into the mixing bowl of flour.
5- Slowly stir in water, stop adding the water when the mixture has a slightly slop consistency. Now you are ready to fry the fish.
6- Set the oven top to medium warm.Fill a frying pan about 1/2in. deep with oil. Spoon fritters (about 1 tablespoon of the mixture) in to the pan, fry for 10 minutes, turn over then fry the other side for a further 5 minutes. Repeat until all of the fritters are cooked.
7- To get rid of some excess oil, Place the fish fritters on a paper towel or napkin.
8- Now you are done and ready to eat them or serve them to your guest.
