- 1 pound lean ground beef
- 1/4 cup all-purpose flour
- 1 tablespoon chili powder, mild, medium, or hot
- 1 teaspoon salt
- 1/2 teaspoon dried minced onion
- 1/2 teaspoon paprika
- 1/2 teaspoon onion powder
- 1 dash garlic powder
- 1/2 cup water
- 1 can (16 ounce size) refried beans
- 8 flour tortillas (10-inch size)
- 1/2 cup enchilada sauce
- 3/4 cup sour cream
- 2 cups shredded lettuce
- 2 cups shredded cheddar cheese
- 1 medium tomato, diced
- 1/2 cup diced yellow onion
Combine the ground beef, flour, chili powder, salt, dried onion, paprika, onion powder, and garlic powder in a bowl. Mix well to combine. Heat a large skillet over medium heat. Add the water and the beef mixture. Cook, stirring to break up the meat. The meat should be rather fine and pasty when cooked. Meanwhile, heat the refried beans as directed on the package. Heat the tortillas as directed on the package. Warm the enchilada sauce, if desired. On each heated tortilla, spread 1/4 cup of the warm refried beans. Top with some of the meat mixture and a tablespoon of the enchilada sauce. Spread 1 1/2 tablespoons sour cream over the sauce. Sprinkle with lettuce, cheese, tomato, and onion. Fold the bottom side of each tortilla up over the filling. Then fold in the left and right sides. Fold the top down and roll up. Serve immediately.
