***Bulk Brownie mix***
- 6 cups all-purpose flour
- 8 cups sugar
- 4 teaspoons baking powder
- 8 ounces baking cocoa
- 4 teaspoons salt
- 2 cups shortening
***To Make The Brownies***
- 2 1/2 cups brownie mix
- 2 eggs, beaten
- 1 teaspoon vanilla extract
- 1/2 cup chopped nuts, optional
- confectioners sugar, optional
To make the mix, combine the flour, sugar, baking powder, cocoa, and salt in a large bowl. Mix well. Add the shortening and cut the shortening into the flour mixture with a pastry blender until it resembles coarse crumbs. Transfer the brownie mix to an airtight container and store at room temperature for up to 3 months. To make brownies from the mix: Preheat the oven to 350 degrees F. Grease an 8-inch square baking dish. Combine 2 1/2 cups of the brownie mix, eggs, vanilla, and nuts in a bowl. Mix until smooth. Transfer the brownie batter to the prepared baking dish. Place the baking dish in the oven and bake at 350 degrees F for 20-25 minutes or until the brownies are set. Remove from the oven. Cut into squares while still warm. If desired, sprinkle with powdered sugar. Store the brownies in an airtight container.
