1 ripe avocado, peeled and mashed
3/4 c sour cream
1 1/2 T lime juice
2 cloves garlic, crushed
1/2 t cumin
1/4 t salt
1/4 t ground red pepper
2 T veg oil
Combine first 7 in a bowl; beat med speed with a mixer until smooth.
Add oil, 1T at a time, beating until blended.
Cover and chill 3+ hours.
