Tequila Lime Shrimp

- 2 pounds medium to jumbo shrimp, peeled and deveined
- 2 tablespoons garlic, minced
- 1 tablespoon ginger, minced
- 1/2 lime, juiced
- 2 ounces tequila
- 2 tablespoons peanut oil
Drizzle peanut oil onto a hot stainless steel grill or wok. Immediately add garlic and ginger and cook until slightly browned. Add shrimp. Cook until halfway done (about 1 to 1 1/2 minutes), stirring the whole time. Add lime and tequila and cook, continually stirring, for 1 to 2 more minutes until shrimp is pink and tender. Serve right away over rice or just by themselves. Cook's Notes: Great leftover chilled over salad. For an added flavor, add sesame seeds during cooking right after the tequila and lime. The sauce really blends well with the seeds.
