Bay Shrimp Salad

Ingredients

1pound bay shrimp
1stalk celery diced
3 tablespoons mayonnaise
3 tablespoons Dijon mustard
2 tablespoons cilantro
1teaspoon chopped garlic
1teaspoon chopped shallots
1teaspoon pepper
2 teaspoons salt
1lemon (Juice)
3 tablespoons red peppers diced
3 tablespoons yellow peppers diced
2 Belgian endive heads
3 drops olive oil (on each)
1/8 teaspoon pepper
1/8 teaspoon cilantro

Instructions
1. Take a knife and chop up shrimp into really small pieces, then place into large glass bowl.

2. Dice one stalk of celery then add to bowl.

3. Add mayonnaise, mustard, cilantro, garlic, shallots, salt, pepper, and lemon juice and mix well.

4. Add diced yellow and red peppers, and stir into mixture.

5. Layout leaves of endive and add shrimp salad mixture in the middle.

6. Place each finished endive and place on serving dish.

7. Sprinkle 3 drops of olive oil on each, then a dash of pepper and cilantro to complete.

8. Serve.
