SWEET POTATO PIE WITH VANILLA
1 (12oz) can evaporated milk
1 c. milk
2 1/2 c. cooked, mashed sweet potato (FRESH!, not canned)
1 (3 oz) packet vanilla pudding mix
1 c. brown sugar
1 tsp ground nutmeg OR cinnamon
1 tsp vanilla
2 tsp shortening, melted
2 egg, beaten
2 pie crusts
Preheat oven to 450 degrees. Put all ingredients in a blender and whip until smooth. Pour into pie shells and cover edges with foil. Bake for 10 minutes. Turn oven down to 350 degrees and bake additional 45 min-1 hour or until pie is set up.
