TIRAMISU
This is an absolutely delicious dessert and takes about 15 minutes to make. It should stay over night in the fridge to let it set.
1 C espresso (regular coffee will not do)
1/2 C white sugar
3 eggs
1 pkg. lady fingers
1 pkg. mascarpone cheese
2 Tbsp. brandy
pinch of cocoa
In a smaller bowl, mix 3 egg whites and a pinch of sugar till it foams, set aside.
In a larger bowl, mix (with a blender) 3 egg yolks, 1 tablespoon of espresso, brandy, and sugar. Then add the mascarpone blend until it is all smooth.
Fold the egg whites into the cheese mixture (it doesn’t blend very well if you ask me, but it’ll taste delicious)
Put the espresso in a low flat(ish) bowl (easy to dip in).Take the cookies and quickly dip them on both sides into the espresso and lay onto the pan. Make one layer of cookies and then add half of the cheese mix. A pinch of cocoa and then another layer of cookies dipped in espresso, then the other half of the cheese mixture and a touch of cocoa for the top.
Note: Instead of doing the egg whites, I used plain whipping cream with no sugar and it seems to work a bit better. But the original recipe is the one above.
