  • 1/3 cup thinly sliced almonds
  • 3 slices bacon
  • 1 1/2 cup freshly grated sharp cheddar cheese
  • 3/4 cup mayonnaise
  • 1 tablespoon grated onion
  • 1/4 teaspoon salt

Preheat the oven to 350 degrees F.

Place the sliced almonds on a baking sheet. Place the baking sheet in the oven and roast for 7 minutes at 350 degrees F, stirring the almonds occasionally so they do not burn. They should be just lightly toasted.

Remove the almonds from the oven and let cool on paper toweling. When cool, coarsely crush the almonds.

Meanwhile, place the bacon in a skillet over medium heat. Cook, turning the bacon as needed, until browned and crisp. Transfer the bacon to paper toweling to drain. When cool, coarsely crumble the bacon.

Combine the almonds, bacon, and cheddar cheese in a bowl. Mix well then stir in the mayonnaise, onion, and salt and mix until incorporated.

Transfer the dip to a serving bowl and serve with crackers. Store leftovers in a covered container in the refrigerator.
