- 2 pounds sweet potatoes, peeled, cooked, and mashed
- 1/2 cup butter, melted
- 2 tablespoons sugar
- 2 tablespoons brown sugar
- 1 tablespoon orange juice
- 2 eggs, beaten
- 1/2 cup milk
- 1/3 cup chopped pecans, or other nuts
- 1/3 cup brown sugar
- 2 tablespoons all-purpose flour
- 2 tablespoons butter, melted
Grease the inside of the crock pot with non-stick cooking spray or butter. In a large bowl, combine the mashed sweet potatoes, first measure of melted butter, sugar, and brown sugar. Mix well to incorporate the ingredients Beat in the orange juice, eggs, and milk until smooth. Add the sweet potato mixture to the crock pot. Combine the pecans, brown sugar, flour, and remaining melted butter. Spread the mixture evenly over the sweet potatoes in the crock pot. Cover the crock pot and cook the sweet potato casserole on high for 3-4 hours. Serve hot.
