1 large ripe tomato, cored, seeded and chopped fine
2 Tbsp minced sweet pickle
2 Tbsp minced yellow onion
2 Tbsp minced sweet red pepper
1 clove garlic, minced
1 Tbsp cider vinegar
1 tsp sugar
1/2 tsp celery seeds
1/2 tsp Dijon or spicy brown mustard
Place all the ingredients in a medium size glass bowl and mix well. Cover and let stand at room temperature at least 30 minutes before serving. Or chill in the refrigerator overnight. Stir well and serve on hamburgers or as an accompaniment to meats. Store tightly covered in the refrigerator for up to 1 week. Makes about 1 1/4 cups.
