FOR A GROUP:
Combine in double boiler over (not in) hot water.
7 cups brown sugar
2 cups flour
1 cups plus 5 Tbsp butter
1 3/4 tsp salt
Stir and cook these ingredients until blended.
Add:
15 3/4 cup scalded milk
Cook and stir until thick.
Beat until light:
28 egg yolks
Pour the cooled custard into the baked pie shells. Cover with meringue. Bake at 350 F for 10-15 minutes or until golden brown.
MERINGUE FOR A GROUP:
28 egg whites
3 1/2 cup sugar
Beat egg whites until frothy. Then gradually add sugar. Beat until stiff and glossy.
BUTTERSCOTCH PIE FOR FAMILY SIZE:
1 3/4 cup brown sugar
1/2 cup flour
1/3 cup butter
pinch of salt
Stir and cook these ingredients until blended.
Add:
4 cups scalded milk
Cook and stir until thick.
Beat until light.

Pour a little of the mixture over them. Beat well and return it to the double boiler. Stir and cook until the yolks thicken slightly. Hand beat custard until cool.

1 tsp vanilla
Pour the cooled custard into the baked pie shells. Cover with meringue. Bake at 350 F for 10-15 minutes, or until golden brown.
