Cook, stirring constantly over low heat until thickened:
15 cups raisins
3 cups sugar
3/4 cup cornstarch
4 1/2 cup water
1 cup plus 2 Tbsp lemon juice
Cool.
CRUMB MIXTURE:
4 1/2 cup butter
6 cups brown sugar
2 quarts plus 2 1/2 cup sifted flour
3 tsp salt
3 tsp baking soda
2 quarts plus 1 cup rolled oats
Mix butter and sugar; add dry ingredients, then oats. Press half of the mixture into 2 long stainless steel greased pans. Spread on filling. Pat on remaining crumbs. Bake at 400 F for 20-30 minutes. Cut into bars. Can be stored in the cookie boxes when thoroughly cooled.
