8 cups flour
1 cup sugar
4 Tbsp baking powder
2 tsp salt
4 eggs
4 cups milk
1 1/2 cup oil

Preheat oven to 400 F. Grease muffin pans. Measure and stir together flour, sugar, baking powder and salt. In another bowl, beat eggs, milk and oil. Add liquids, all at one time to dry ingredients. Stir only until dry ingredients are moistened. Fill muffin pans 2/3 full. Bake for 20 minutes or until brown.
BLUEBERRY MUFFINS: Add 2 cups blueberries in batter.
RAISIN MUFFINS: Add 2 cups raisins to batter.
PECAN/NUT MUFFINS: Add 1 cup chopped pecans to batter.
DATE/NUT MUFFINS: Add 1 cup chopped dates and 1 cup chopped nuts to batter.
CHEESE MUFFINS: Add 4 cups shredded cheese to batter.
BACON MUFFINS: Add 1 cup bacon bits or crumbled bacon in batter.
SUGAR CRUSTED MUFFINS: After baking basic muffins, dip top of each muffin in a little dish of melted butter, then in another dish of 2 cups sugar, 4 tsp cinnamon and 1 cup nuts.
COFFEE CAKE MUFFINS: Make basil muffins, then put 1 Tbsp of the following mixture on top of each muffin before baking:
2 cups brown sugar
2 cups chopped nuts
8 Tbsp flour
8 Tbsp butter, melted
8 tsp cinnamon
Combine these ingredients and stir well. Mixture will be crumbly.
