Serves 6

1/2 cup chopped onion
3 Tbsp oil
1/2 cup chopped mushrooms
1/2 cup bean sprouts
1 1/2 cup sliced celery
1 1/2 cup chopped cooked ham
6 cups cooked rice
1 Tbsp soy sauce
2 eggs, scrambled
1/2 cup chopped green onion

Stir fry onion in hot oil in skillet until brown. Add mushrooms, bean sprouts and celery. Stir fry until tender. Add ham, rice and salt and pepper to taste and enough soy sauce to make of desired color; mix well. Spoon into serving bowl. Cut eggs into strops. Arrange over top. Sprinkle with green onions.
