Makes about 5 cups
1 cup sun dried tomatoes in oil, drained and chopped
1 cup chopped pecans, toasted
1/2 cup basil pesto
3 blocks of cream cheese (8 oz each) softened
4 fresh basil leaves, for garnish
Combine sun dried tomato, pecans and pesto in medium bowl.
Line inside of separate medium bowl with plastic wrap. Spread 1 block of cream cheese evenly in bottom of bowl. Spread 1/2 of sun dried tomato mixture on top of cream cheese to side of bowl. Continue layering, spreading second block of cream cheese, remaining sun dried tomato mixture and third block of cream cheese, in order given, to side of bowl. Cover. Chill for about 3 hours until firm. Gently loosed plastic wrap bowl. Invert cheese spread onto large serving plate. Discard plastic wrap.
Garnish with basil leaves.
