pastry for 10 inch pie
3 cups sweet potatoes
1 stick butter
3 cups sugar
1 tsp vanilla
pinch of nutmeg
1/2 can evaporated milk (13 oz)
4 eggs, beaten

Boil potatoes in jackets until done. Peel and mash. Add butter, sugar, vanilla and nutmeg. Combine beaten eggs and milk. Mix into potato mixture. Pour into pastry shell. Bake at 350 F for 1 hour or until done. Serve with dollop of whipped cream.
