Serves 8
10 1/2 oz bag of baked corn tortilla chips
3/4 lb package of veggie ground round
1 cup chopped red pepper
14 oz package or grated Mexican cheese blend
2 medium tomatoes, chopped
2 Tbsp sliced green onion
Place the oven rack in the center position. Turn the oven on to 375 F. Cover the baking sheet with the foil. Grease with the cooking spray. To assemble your nachos, layer ingredients on the baking sheet as follows:
a) 4 cups tortilla chips
b) 2/3 cup veggie ground round
c) 1/3 cup red pepper
d) 1 cup of the cheese
Repeat steps a, b, c and d until all ingredients are used-- remember, you will have extra cheese to use on top layer. Bake for about 15 minutes until the cheese is melted and starting to brown. Remove the baking sheet to the wire rack. Turn the oven off.
Sprinkle nachos with the tomato and green onion.
