Serves 6
1 (40 oz) pkg frozen scalloped potatoes
5 small green onions, thinly sliced and divided
1 (20 oz) container bbq shredded pork
1/2 tsp dried crushed red pepper
1 cup (4oz) shredded sharp cheddar cheese
Thaw frozen potatoes in refrigerator overnight. Stir together scalloped potatoes and half of the green onions. Stir together pork and red pepper in a separate bowl. Spread pork mix into a lightly greased 9" pan; top with potato mix.
Bake at 375 F for 55-60 minutes or until potatoes are golden brown. Sprinkle with cheese and remaining green onions. Let stand 15 minutes.
