2 cups

1 pint ripe berries (raspberries, strawberries, etc)
1 (9-inch) length lemon peel
1/4 cup sugar
1 1/2 cup white wine vinegar

Crush berries and put into a glass jar or bowl with lemon peel. Heat sugar and vinegar, stirring to melt sugar; do not boil. Pour over crushed berries. Cover with a clean towel or cheesecloth and let stand 2 days.
Strain through cheesecloth. Store vinegar in sterilized bottles, adding a few fresh berries for color; if desired.
