Serves 12
6-8 medium onions, chopped
2 Tbsp oil
5 lb ground chuck
6 1/2 cup pureed whole tomatoes
6 Tbsp tomato paste
1/2 cup chili powder
20 cloves garlic, minced
1 Tbsp cumin
1 Tsp oregano
1/2 tsp cloves
4 (20 oz) cans kidney beans
Saute onions in oil in Dutch oven. Add ground chuck. Cook until ground chuck is brown and crumbly; stirring constantly; drain. Add whole tomatoes, tomato paste, chili powder, garlic, cumin, oregano and cloves; mix well. Bake at 350 F for 2 hours. Warm kidney beans to serving temperature in saucepan. Place chili and kidney beans in serving bowls.
Serve with bowls of sour cream, shredded Cheddar cheese, chopped green onions, chopped lettuce, chopped ripe olives, chopped tomatoes or chopped green chilies. Allow guests to build their own.
