2 cans jalapeno bean dip
3 avocados
2 Tbsp lemon juice
1/2 tsp salt
1/4 tsp pepper
8 oz sour cream
1 envelope taco seasoning mix
1 cup chopped green onion tops
3 tomatoes, chopped
1 can chopped black olives, drained
2 cups shredded Colby cheese
Spread bean dip in circle in 12-inch platter. Combine avocados, lemon juice, salt and pepper in mixer bowl; mix well until smooth. Spread in smaller circle over bean dip, leaving edge uncovered.
Combine sour cream and taco seasoning mix. Spread in smaller circle over avocado, leaving edges uncovered. Sprinkle onion tops, tomatoes, olives and cheese in smaller circles over dip. Garnish with parsley. Serve with corn tortilla chips.
