2-3 lb boneless, skinless chicken breast
1 can (13.5 oz.) coconut milk (A taste of Thai)
1 packed (3.5 oz.) peanut sauce mix (A taste of Thai) use both inner envelopes
Preheat oven to 350 F. Add peanut sauce mix and coconut milk to a baking dish. Whisk until smooth. Add chicken, dredging both sides of chicken in peanut sauce. Bake uncovered for 25-30 minutes or until done. Spoon extra sauce over rice, potatoes or pasta.
