Serves 8

Single crust pie pastry (recipe under "my recipes, breads)
1/2 cup butterscotch chips
2 cup pecan pieces
1/4 cup (1/2 stick) unsalted butter, melted
1/2 cup sugar
1/4 cup light corn syrup
2 eggs

Heat oven to 350 F. Roll out 1 disc of dough on a well floured surface into an 11 inch round. Fit into a 9 inch pie plate. Crimp edges. Scatter butterscotch chips and pecan pieces in pie shell.
Beat together butter, sugar, corn syrup and eggs in a medium bowl. Pour over nuts and butterscotch chips. bake in heated 350 F oven for 45-50 minutes or until golden brown. If pie browns to quickly, cover with aluminum foil after 20 minutes. Cool pie completely on a wire rack.
