2 Tbsp olive oil
1 package (7 oz) pasta or vermicelli or angel hair pasta, broken into 1-inch lengths
1/2 cup finely chopped onion
1 clove garlic, finely chopped
2 cups converted long grain white rice
4 cups chicken broth
1 tsp salt
Fresh cilantro leaves, if desired

In a 12 inch skillet, heat oil over medium high heat. Stir in pasta; cook and stir 3-5 minutes or until golden brown. Stir in onion and garlic; cook 2-3 minutes, stirring constantly, until tender.
Stir in rice; cook 30-60 seconds or until light golden brown. Stir in chicken broth and salt. Reduce heat to low; cover and cook 20-25 minutes or until rice is tender and liquid is absorbed. Garnish with cilantro leaves.
