  • non-stick cooking spray
  • 1/2 teaspoon aniseeds
  • 1 cup finely chopped onion
  • 1/2 cup port or other sweet red wine
  • 1/2 cup chopped pitted prunes
  • 1 tablespoon Dijon mustard
  • 3/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 slices (1 ounce size) pumpernickel bread, torn into small pieces
  • 1 1/2 pound lean ground pork

Preheat oven to 375 degrees F. Heat a small cooking spray-coated pot over medium heat.

Saute aniseeds 1 minute, add onions and cook 3 minutes. Mix in wine and prunes and let boil 3 minutes, stirring frequently.

Add aniseed mixture, mustard, salt, pepper, and bread to a large bowl and combine well. Let mixture rest until cooled.

Combine pork with aniseed mixture and blend well. Arrange mixture in a 9 x 4 inch cooking spray coated loaf pan. Bake 1 hour or until a meat thermometer reads 160 degrees F. Let rest 10 minutes before slicing.
