6-8 slices of apple-wood smoked bacon, or your favorite brand.
Diced ham can also be substituted for bacon.
1 large vidalia onion-diced small
1 glove of garlic minced
4 cups frozen or fresh green beans
1 Tbl. cornstarch
1/4 tsp dry mustard
2 Tbl. brown sugar-or to taste
1 cup water or vegetable or chicken stock
1 Tbl. apple cider vinegar
Cut bacon into small pieces. Fry it until it's crisp, but not dry.
Remove bacon from the skillet and set aside. Chop onions into small dice and add to bacon grease-yes use the grease! Saute onions until lightly brown and tender.Remove from heat.
Steam or boil green beans until crispy-tender.
Drain the beans reserving 1 cup of cooking liquid.If you need to add water to the equal 1 cup; dissolve cornstarch in the 1 cup reserved bean cooking liquid.
Set beans aside.
Add the cornstarch & reserved liquid to a medium saucepan.
Add the dry mustard, brown sugar and apple cider vinegar to the medium sauce pan and over medium heat cook until thickened, stirring occasionally.
Mix in bacon, beans and onions,into the sauce and simmer until hot throughout.
