16 oz. of several different kinds of cheese, such as fontina, parmesan, goat, cheddar, gouda, etc.*
1 Tbsp. butter
2 cloves garlic
1/4 cup white wine

Shred cheese or cut into 1-inch chunks. Put all ingredients in a food processor and combine until mixture becomes the consistency of whipped cream cheese. Serve immediately with crackers, vegetables or bread.

*Use whatever cheese you have on hand in the fridge. This is a great way to use those leftover pieces of good cheese that are too small to do anything else with.
