- 16 cherry tomatoes
- 1 pound bacon, cooked and crumbled
- 1/2 cup mayonnaise
- 1/3 cup chopped green onions
- 3 tablespoons grated Parmesan cheese
- 2 tablespoons snipped fresh parsley
Carefully slice a thin piece off the top of each tomato. Using a small spoon, scoop out the flesh of the tomato leaving a shell. Turn the tomatoes upside down and place on paper toweling to drain. Combine the bacon, mayonnaise, green onion, cheese, and parsley in a small bowl. Spoon the bacon mixture into the drained tomatoes. Place on a tray or plate and place in the refrigerator for 2-5 hours for the flavors to meld before serving.
