Lisa’s Shredded BBQ Chicken for Sandwiches– most of the amounts are approximate!
• Chicken Breasts – 3 lb. boneless and skinless
Slice breast into strips and poach in seasoned boiling water (salt, pepper, garlic & onion pwdrs) until done. Remove from water and let cool until you can handle. Then using two forks, pull and shred the chicken completely.
• BBQ sauce – store bought, generic 1 bottle
• Catsup – store bought, generic ½ -3/4 of a bottle
• Onion – Chopped
• Worcestershire Sauce – to taste
• Mustard – to taste
• Brown Sugar – to taste
• Vinegar – to taste
• Syrup (any kind, Karo light, dark, or maple syrup of pancake syrup) – to taste and texture
• Hot Sauce (I like 2 T. approx. of BW3’s Mango Habanera Sauce, or use tobasco) BE CAREFUL not to use too much. Just enough to add a kick
Combine all ingredients for sauce and add to shredded chicken. Cook over medium heat to get heated clear through, then move to the crock-pot and cook for hours, as needed. High if you are in a hurry and can check on it every hour or so; or low if you have to leave it cooking for hours without checking on it.
