2 pounds Stew Meat
4 or 5 Carrots, cut up bite size
4 or 5 medium Potatoes, cut up in large chunks
1 large Onion chopped
1/2 small bag of frozen peas (optional)
1 Bay Leaf
1 can Tomato Soup
1 can Water
1/4 cup of Sweet Pickle Juice
Salt and Pepper to taste
a dash or two of hot sauce or Tony Chachere's Original Creole Seasoning
dash of Lowery's Seasoning
Mix all ingredients except the peas into a cast iron dutch oven and bake on 250 degrees for about 4 or 5 hours. The last half hour of cooking add the peas. Enjoy!
HINTS:
The critial ingredient is the Sweet Pickle Juice. Don't be tempted to leave it out as it give the stew a wonderful flavor.
A cast iron dutch oven works best,but you can also use your slow cooker on low and leave it to cook while you are at work for 8 hours or so.
I find stew meat too fatty so I cut up a beef round, bottom round roast instead.
If it seems too runny, mix up a tablespoon of corn starch with some water and stir in to thicken.
