2 Cups flour
1/4 cup sugar or Splenda
2 Cups milk
2 tsp. baking Powder
1/8 tsp. Salt
1 Egg
1 tsp. vanilla Extract
1 tblsp. Oil

In a large bowl sift the flour with the baking powder, add the sugar or Splenda)and salt, set aside. In a small bowl, whisk the egg lightly, add the milk, vanilla and oil.
Incorporate into the flour mixture and mix by hand until well blended. You can decrease the amount of milk if you prefer thicker batter. You can also add 1/2 tsp. cinnamon for a nice flavour, or add 1/2 cup of your favourite fruit to the batter. Cook on medium - high heat on a oiled griddle until bubbles appear and then flip over.
