4 qts small peaches (about 8lbs)
7 c sugar
1-2 sticks of cinnamon
1 T whole all-spice
1 tsp whole cloves
2 c water
3 c vinegar

1. Peel peaches and cut into quarters.
2. Boil 3 cups of sugar, spices, water and vinegar for 3 mins.
3. Add 10 peach quarters at a time, and boil until fruit is tender.
4. Let stand in syrup for 12-24 hrs.
5. Place peaches in hot, clean jars.
6. Add remaining sugar to syrup in pot, and cook down to desired thickness.
7. Strain out cinnamon, all-spice, and cloves.
8. Pour syrup over peaches into jars, and seal.
