Makes 6 dozen.
2 c. semisweet chocolate chips
1/2 c. light corn syrup
3/4 tsp. warm water
1/2 T. orange extract
squares of colored foil or cellophane, for wrapping,
Line a 13 x 17-inch rimmed baking sheet with plastic wrap.
Place chocolate chips into a microwave-safe medium bowl.
Heat in the microwave for 1 minute, stir and then continue to heat at 20 second intervals, stirring between each, until melted and smooth; cool to lukewarm.
Add corn syrup, water and orange extract; stir well and scrape into prepared pan (mixture should be about 1 inch thick- it will not fill the pan entirely.
Cover and let set overnight at room temperature; the mixture will be stiff but still flexible.
Turn the candy out onto a work surface and peel off plastic wrap; cut into 3/4-inch wide strips
Using hands, form each strip into a log; roll on a hard surface until 1/2-inch in diameter.
Cut each log into 1-inch long sections.
Cover and set aside to firm up a bit before wrapping.
Roll each piece up in a square of colored foil or cellophane, twisting the ends to secure.
