Makes 6 servings.
1 lb. raw shrimp
1 chicken breast fillet
2 eggs
3 T. vegetable oil
1 large carrot, julienned
1 clove garlic, crushed
1 tsp. Sambal Oelek*
1 T. soy sauce
4 c. cooked rice
4 green onions, sliced diagonally
2 green onions, julienned/curled**
1/2 red pepper, julienned/curled**
Peel and devein shrimp. Slice chicken into thin strips.
Lightly beat eggs. Heat 1 tablespoon oil in a frying pan, pour in eggs; cook over low heat until eggs have set. Remove from heat and cool. When the omelet is cold, roll it up and slice thinly.
Heat remaining oil in frying pan, add shrimp, chicken, carrot and garlic; stir until browned.
Add Sambal Oelek, soy sauce, rice and green onions; stir-fry until heated through.
Serve garnished with omelet strips, green onion and red pepper curls.
*Sambal Oelek is an Indonesian chili sauce. If not available, substitute with a hot Oriental chili sauce.
**To make green onion and pepper curls; cut into fine strips and place in iced water, refrigerate.
