Makes 6 servings.
2 T. butter
1 c. sliced mushrooms
1 clove garlic, minced
3 lb. chicken legs or thighs
or
6 chicken breast fillets
1 10-oz. can cream of mushroom soup
1 tsp. curry powder
1 c. dry white wine
salt and pepper
2 c. shredded Old Cheddar cheese
paprika
Preheat oven to 325F.
Heat butter in skillet. Add garlic; saute until soft. Add mushrooms and continue to saute until tender.
Place chicken pieces in shallow baking pan.
In a large bowl, mix together mushrooms and garlic, mushroom soup, curry powder and wine; season to taste with salt and pepper. Stir well to combine; pour over chicken.
Sprinkle cheese over chicken and sprinkle generously with paprika.
Bake at 325F for 1 1/2 hours.
